A selection of the wines that are produced at the
Cave Leyvraz & Stevens :
White wines Chasselas : Originally from Macon in the Burgundy-region of France, this is the most cultivated white wine in Switzerland. It is a fresh, light wine, ideal as an aperitif. It goes well with fresh-water fish, cheese dishes and smoked dishes, as well as with white meats, such as veal, pork and chicken. It can also accompany frog legs, crayfish, and milder ocean fish such as mullet (rouget).
Aligoté : More aromatic than Chasselas, also from Bourgogne. Goes well with fish and sea food, as well as mushroom dishes.
Chardonnay : One of the great wines of Bourgogne. Very aromatic ; goes well with spicy foods.
Pinot Blanc : Mutation of the Pinot Gris (grey) and by consequence is a Pinot Noir (black) of the second degree. Good as an aperitif, it goes well with fish, raclette and fondue.
Pinot Gris (grey) : Mutation of the Pinot noir (black). Called " Rulander " in German, " Malvoisie " in the Valais, " Tokay " in Alsace and " Moine Gris " in Hungary. A dry wine in Geneva, good with fish and sea food and foie gras !
Riesling Sylvaner : a cross of the Riesling and the Sylvaner grapes. Goes well with a " choucroute " and seafood.
Gewürztraminer : A dry wine from Alsace, originally from the South Tyrol. Grape used in the Savagnin of Jura and the Heida of the Valais. Served with spicy foods and strong cheeses as Munster, Roquefort or fresh goat cheese.
Johanniter : Fine, slightly fruity wine, a new cross between Chasselas, Riesling, Pinot Gris and Seyve Villard, the plant shows a good resistance against the fungus diseases with a minimum of treatments.
Red wines Gamay : May be red or rose, originally from Beaujolais. Goes with white and red meat, duck, and game, as well as with fresh-water fish.
Pinot noir : A traditional red wine, that is served with red meat. A part of the production has been matured during one year in oak barrels, called 'élévé en fûts de chêne' and has acquired the fine taste of old Burgundy wine.
Cabernet Sauvignon : The same type of grape as used for Bordeaux wines, matured in new oak barrels. This wine has a pronounced, powerful taste, a beautiful dark red color and may be kept for many years in your cellar.
